A Savory Spring Favorite from Woodstock Orchards
When spring finally rolls into Woodstock, Connecticut, the first signs of the season can be found at our farm stand—starting with crisp, tender farm-fresh asparagus. As one of the earliest crops of the year, asparagus signals that the season is shifting, and it deserves a spotlight all its own.
This Curried Asparagus Soup is one of our favorite ways to feature the fresh flavor of local asparagus. The warmth of curry, the creaminess of coconut milk and peanut butter, and the sweet touch of brown sugar create a bold and balanced dish that’s perfect for cool spring evenings.
Curried Asparagus Soup
Serves 4–6
Ingredients:
2 lbs fresh Woodstock Orchards asparagus
1 medium onion, chopped
1 clove garlic, chopped
1 tablespoon canola or vegetable oil
2 russet potatoes, peeled and cubed
2 tablespoons curry powder
2 tablespoons brown sugar
2 tablespoons peanut butter
1 can coconut milk
2 cups broth of your choice (vegetable or chicken)
1 cup cream (optional)
Salt and pepper to taste
Instructions:
Snap off and discard the woody ends of the asparagus.
In a large soup pot, heat oil and sauté asparagus, onion, and garlic for 5–8 minutes.
Add cubed potatoes and stir in curry powder, brown sugar, and peanut butter. Cook until fragrant (about 1–2 minutes).
Add coconut milk and broth. Simmer until potatoes are tender, about 15 minutes.
Carefully puree the soup in batches in a blender until smooth. Return to the pot.
Stir in cream if using, and heat gently until warmed through (do not boil). Season with salt, pepper, and more curry if desired.
